Spinach and Sweet Corn (Palak and sweet corn sabzi)

Hey guys!Β  Sorry for not posting regularly . I’ve been busy with exams . I had my 3rd semester exams so I was busy preparing for them .Β  But now,Β  I’m back and I promise I’ll post regularlyΒ  πŸ™‚

So,Β  here is a quick,Β  easy and healthy recipe I prepared for dinnerΒ  last night . This one is similar to palak paneer,Β  not much of a difference.Β  I’m using low fat cream but you can avoid it depending on your preference.

Spinach and Sweet Corn Sabzi Recipe –

Serving size : 4

INGREDIENTS –

● Spinach 250g

● 1/2 cup Sweet Corn kernels

● 2 tbsp Oil

● 1 tsp cumin (jeera)

●  1/2 tsp Asafoetida (hing)

● 1/2 inch ginger,Β  crushed

● 4 -5 garlic cloves,Β  crushed

● 2-3 medium sized Onions,Β  blended / grinded

● 2 medium sized Tomatoes,Β  blended

● 1/2 Green Chilli,Β  optional

● 1 tsp Kasuri methi (Dried fenugreek leaves)

● 1/2 tsp Red chilliΒ  powder

● 1/2 tsp tumeric powder

● Salt to taste

● 1 tsp Coriander Powder

● 1 tsp Low fat cream (optional)

● 2 tbsp Milk

● 1/2 tsp Garam masala

● 1/2 cup Water

DIRECTIONS –

1.Β  Wash spinach thoroughly in running water.

2. Blanch spinach in salted water for 2 minutes.

3. Drain the spinach and wash it in cold water.

4. Drain and squeeze out theΒ  excess water and grind it into a fine paste along with green chilli (optional).

5. Also grind onion and tomatoes separately.Β 

6. Heat oil in a pan add Cumin,Β  Asafoetida, crushed ginger and garlic .

7. Saute until golden brown in color ,Β  add onion paste .

8. Add tumeric powder,Β  red chilli powder, salt and coriander powder.

9. Saute until golden brown . Make sure that spices don’t burn . Add water if needed .

10. Add tomato paste . Cook for 4-5 minutes. AddΒ  milk and low fat cream (optional) .

11.Β  Cook for another 2-3 minutes.

12. Add palak puree,Β  corn kernels,Β  kasuri methi (dry fenugreek leaves) and some water.

13. SimmerΒ  and cook for 5-6 minutes .

14. Add Garam Masala, mix well and take off the heat.

15. Garnish with low fat cream (optional)

16. Serve hot with nan,Β  parathas or chapati πŸ™‚

Palak paneer (Spinach and cottage cheese )

One of the most popular paneer dish is palak paneer . It’s simple to make yet it’s tasty and of course, full of nutrition . I often make it at home . Infact it is so popular in North India that you’ll find it everywhere be it weddings, restaurants or parties.

So, here’s a quick recipe to make palak paneer at home .

Palak Paneer Recipe

Serves 3

INGREDIENTS

● 1 large bunch Palak (Spinach)

● Cottage cheese (Paneer ) , cut into cubes

● 2 medium sized Onion, finely chopped

● 1 medium sized tomato, pureed

● 1/2 inch ginger, crushed

● 3-4 Garlic cloves

● 1/2 tsp Turmeric powder

● 1/2 tsp Red chilli powder

● 1 tsp Coriander powder

● Salt – according to taste

● 1 tsp Cumin seeds

● 1/2 Green chilli (optional)

● Oil – 2 tbsp

● 1 cup Water

DIRECTIONS –

1. Wash spinach thoroughly in running water.

2. Blanch spinach in salted water for 2 minutes.

3. Drain the spinach and wash it in cold water.

4. Drain and squeeze out the excess water and grind it into a fine paste along with green chilli.

5. Heat oil in a pan, add cumin seeds, ginger and garlic . When they begin to change color add onions

6. Saute until light brown in color.

7. Then add tomato paste, turmeric powder, red chilli powder, coriander powder and salt . Mix well.

8. Cook for 5-6 minutes till oil shows on top.

9. Add spinach puree and stir. Add water if required.

10. When gravy starts to boil add paneer cubes.

11. Cook for 4-5 minutes.

12. Transfer it into a serving dish. Garnish with grated paneer .

13. Serve hot with roti or nan .

Pasta with tomato sauce and cheese

Mmm… who doesn’t love freshly cooked pasta!  I frequently make pasta at home . My dog Whitey too loves pasta . Isn’t that crazy? 
But you know nothing is more amazing than making fresh pasta noodles at home . They are definitely better and tastier than the store brought ones but  the best part is they are made from whole wheat .
So people that are calorie – conscious like me, this recipe is perfect for you guys πŸ™‚  You can find my recipe of making pasta noodles at home here.

This recipe is  pretty popular and tasty . It’s really simple to make and you can easily find all the ingredients in your kitchen pantry .

Pasta With Tomato Sauce Recipe

Serves 2

INGREDIENTS –

● 1 cup Wheat Pasta (You can use the store brought ones too)

●  3 Tomatoes (blended)

● 1 onion (Blended or finely chopped)

● 1/2 inch Ginger  (crushed )

● 3-4 Garlic cloves (crushed)

● 1 Bay leaf

● 1/2 tsp Black pepper powder

● Salt to taste

● 1 tbsp Olive Oil

● Mozzarella Cheese ( shredded )

● 1/4 tsp 6-7 Basil leaves ( chopped )

● Paprika (red chilli powder,  optional )

● Oregano (optional)

DIRECTIONS –

1. Boil pasta in water according to package directions. After it’s done drain and keep aside. 

2. In a pan heat oil,  add bay leaf,  ginger,  garlic  and onion paste . Cook until brown .

3. Then,  add tomato paste,  salt,  basil leaves,  black pepper powder,  paprika. Cook for 5-6 mins

4. Add pasta to the sauce. Mix well (Make sure the pasta doesn’t break.) Cook for 2 – 3 mins.

5. Spoon into bowls and top with mozzarella cheese and oregano , if desired.

6. Serve hot!

How to make pasta at home without machine (Wheat pasta )

Who says you can’t make pasta at home without a machine? For people like me who don’t own a pasta machine well, you can still make yummy pasta at home. Obviously you can’t get thinly sliced spaghetti but you can make thick,Β  delicious, rustic homemade noodles and guess what all you need is a rolling pin and a knife. It really couldn’t be easier.

INGREDIENTS-

● 1 cup Whole wheat flour

● 1/4 tsp Salt

● 1 tsp olive oil

● Water, as needed

DIRECTIONS –

1. Mix whole wheat flour, oil, salt and water (1 tablespoon at a time ) until the dough comes together. Remember the dough shouldn’t be sticky. If sticky then add more flour to it.

2. Knead the dough for 5 minutes or until smooth and elastic .

3. Cover it with a cloth and let it rest for 30 mins .

3. After 30 mins, Divide the dough into 2 balls and place the ball on a lightly floured surface or kitchen counter

4. With a rolling pin, roll out the dough as thin as you can, forming a rectangle. Cut the edges .

5. Take a sharp knife or pizza cutter and cut out long and thin strips of dough.

6. Allow the fresh noodles to air dry for at least 20-25 minutes to avoid having it clump together.

7. Put a large pot of water over high heat and allow it to come to a boil.

8. Then add pasta noodles and allow them to cook for about 4 to 5 minutes.

9. Drain well.


Points to remember –

● Fresh noodles will only take about 4 – 5 minutes to cook β€” once they are done, they float to the top of the water.

● Drying out the pasta strips is really important . No matter how impatient you are. If you skip this step the pasta will become sticky.

● You can use eggs to make sure that the pasta strips don’t break and stays intact while boiling . Egg acts as a binding agent.

● You can also cut the pasta by rolling the flattened dough into a jelly roll and then making cuts horizontally, for more uniform
strips .

● Roll the dough as thin as you can .

● Do not add pasta before the water boils . Make sure you add it once the water is boiling with big bubbles. The boiling temperature is what prevents the pasta from getting mushy.

Vegetable Pizza in a Skillet

I make pizza very often at home, atleast once in a month! Everyone in my family loves pizza . Even my dog, Whitey .
Earlier I used to buy pizza base from the market . Now, I’ve started making it at home and guess what homemade pizza is really, really good. It’s more delicious and of course healthier than the ones available in the market.

This recipe is one of the most popular pizza recipes. I’m using onion, capsicum and cabbage . You can use any vegetables of your choice .

So let’s begin!

Vegetable Pizza Recipe –

INGREDIENTS

Serving size- Around 4 medium sized pizza

For the dough –

● 3 cups Whole wheat flour .
(You can even use all purpose flour)

● 2 tablespoon Olive Oil

● 1 teaspoon Salt

● 1 teaspoon Active dry yeast

● 1 tbsp Sugar

● Lukewarm Water – 1 cup

For pizza sauce –

● 200g Tomato Puree / Paste

● 1/2 teaspoon Oregano

● 3-4 garlic cloves (grated or finely minced)

● 1 onion (finely chopped)

● 1 tbsp sugar

● 1/2 tsp salt

● Pinch of ground pepper

● 6 -7 basil leaves, torn into small pieces

● 2 tbsp Olive oil

Topping-

● 2 Onions, chopped

● 1 Bell pepper (Capsicum) , chopped

● 1 Tomato, chopped

● Mozzarella Cheese (shredded or sliced)

DIRECTIONS –

For Dough –

1. In a bowl, mix water, yeast & sugar and wait until the yeast is frothy .

2. Mix flour, salt, olive oil into the yeast mixture

3. Knead the mixture until it comes together .

4. Now, turn the dough out onto a clean work surface dusted with flour. Knead until the dough is smooth and elastic, about 5 -7 minutes, using more flour if necessary to keep it from sticking.

5. Place dough in a greased bowl, cover with a damp towel and allow to rise for 30 minutes or until doubled in size.

6. Divide the dough into 3-4 balls depending on the size you wish to make.

7. Preheat the skillet (tawa in hindi ) . If you are not using a non-stick skillet, grease it with oil and place the pizza inside it.

8. Cook it for 3-4 minutes until the lower side of the crust gets a little brown then flip it and cook the other side too in the same manner.

For sauce –

1. Heat oil in a pan over medium- high flame .

2. Now add garlic and onions to it and saute for 2-3 mins until light brown in color

3. Add the remaining ingredients. Lower the heat and simmer

4. Cook for 5-6 minutes.

5. Keep aside and let it cool.

To finish-

1. Spread sauce on pre –baked crust.

2. Top with chopped onion, capsicum, tomatoes and mozzarella cheese .

3. Put the pizza in a skillet. Cover it and cook the pizza for about 5-6 minutes until sufficiently crispy and melted to your liking .

4. Your delicious pizza is ready! Cut into pieces and serve immediately.

Sprouted Moong Bean Salad

Since I sprouted moong/mung beans the other day, I decided to make this yummy salad at home for dinner . This salad is amazingly healthy and is a good source of proteins for vegetarians
To increase the protein content I’ve added soya chunks/ nuggets (I use the ones from nutrella) to it . You can add other vegetables and fruits as well.

Although you can get sprouted mung beans from the market but it is always better to sprout moong beans at home . Here’s how to sprout moong beans at home . It’s safe, easy and cheap.

In this salad, I’ve stir fried moong beans, you can steam it, depending on what you prefer .

INGREDIENTS –

Serves 6

● 3 cups Sprouted Moong / Mung beans (You can read it here )

● 1/2 Cabbage, finely chopped

● 1/2 Carrot, shredded

● 1/2 Capsicum (Bell pepper ) , chopped

● 1 Tomato, finely chopped

● 1 Onion, finely chopped

● 1/2 Cucumber, finely chopped

● Salt to taste

● 1/2 tsp Red chilli powder (Paprika)

● 1tsp Chaat masala

● 1 tbsp lemon juice – or as required

● 1/2 Soya nuggets/ chunks – Nutrella

● Coriander leaves to garnish

● 2 tbsp Oil

DIRECTIONS –

For soya chunks

1. Take a saucepan, add water and a pinch of salt into it. After a boil, add soya nuggets.

2. Cook for 5-6 minutes until soft.

3. Rinse with cold water and squeeze it until dry.

4. Cut into pieces and keep aside

For salad –

1. In a pan add oil, chopped cabbage, carrot, capsicum, salt, red chilli powder and soya chunks.

2. Cover and cook for 3 minutes until soft (not too soft though, the vegetables should be crisp. )

3. Then, add sprouts and cook for 3 more minutes . (Do not overcook the sprouts )

4. In a bowl, add chopped onions, tomatoes, cucumber, cooked sprouts, lemon juice, chaat masala . Mix well.

5. Garnish with coriander leaves.

6 . Your healthy salad is ready! Enjoy!
